Description

A stunning and refreshing watermelon fruit jelly made by hollowing out a mini watermelon and filling it with colorful mixed berries suspended in crystal-clear gelatin. This impressive dessert creates a beautiful rainbow effect when sliced and offers a perfect wobbly texture that’s both visually striking and deliciously refreshing.

  • 1 mini watermelon
  • 1 cup white grapes
  • 1 cup strawberries, chopped
  • 1 cup raspberries
  • 1 cup blueberries
  • 1 cup blackberries
  • 6 (0.25 oz) packets unflavored gelatin
  • 1 cup cold water
  • 1½ cups hot water
  • 2 tbsp sugar

Instructions

  1. Slice the top off the mini watermelon and hollow it out with a spoon. Discard the flesh or save it for smoothies.
  2. Rinse all the berries and grapes thoroughly. For extra cleanliness, soak in a diluted vinegar bath, then pat dry.
  3. In a bowl, bloom the gelatin by sprinkling it over the cold water. Let sit for 5 minutes.
  4. Add the hot water and sugar to the bloomed gelatin. Stir until fully dissolved. Skim off any foam or bubbles for a smooth finish.
  5. Fill the hollowed watermelon with the mixed fruit, then slowly pour in the gelatin mixture until everything is covered and the melon is full.
  6. Refrigerate overnight until fully set.
  7. When ready to serve, slice into wedges and enjoy the wobbly magic!
