Description

Süslü Pide is a fancy Turkish flatbread generously stuffed with seasoned ground meat and vegetables, topped with melted cheese and baked to golden perfection. This hearty comfort food combines soft, pillowy dough with a flavorful savory filling.


Ingredients

  • 625g all-purpose flour (5 cups)
  • 200ml lukewarm water (1 cup)
  • 200ml lukewarm milk (1 cup)
  • 50ml vegetable oil (5 tablespoons)
  • 10g granulated sugar (1 tablespoon, leveled)
  • 15g salt (1.5 teaspoons)
  • 10g active dry yeast (1 packet)
  • 500g ground meat
  • 2 medium onions
  • 2 green peppers
  • 1 red bell pepper
  • 1 medium tomato
  • Black pepper to taste
  • Salt to taste
  • Red pepper flakes to taste
  • 4 tablespoons vegetable oil
  • 1/2 tea cup water
  • Fresh parsley
  • 5 tablespoons tomato sauce
  • Grated kashar cheese for topping

Instructions

  1. Place flour in a large bowl and create a well in the center. Add lukewarm water, milk, yeast, and sugar to the well. Let sit for 5 minutes until foamy.
  2. Add salt around the edges of flour and start kneading. Once dough comes together, add vegetable oil and knead until smooth and elastic.
  3. Cover dough well and let rise until doubled in size.
  4. Meanwhile, finely chop all vegetables (onions, peppers, tomato). Mix chopped vegetables with raw ground meat, seasonings, oil, water, and tomato sauce.
  5. Turn risen dough onto lightly floured surface and knead briefly. Roll out with rolling pin to medium thickness.
  6. Cut circles using a 20cm lid. Gather scraps, reform into ball, and roll out again.
  7. Preheat oven to 200°C (400°F) with fan on.
  8. Place a generous spoonful of meat mixture on each dough circle, spreading with fingertips and leaving border around edges.
  9. Top each pide with grated kashar cheese.
  10. Bake on middle rack until golden brown and cheese is bubbly.
  11. Serve hot with ayran (Turkish yogurt drink) on the side.
