- 1 lb chicken, cut into small pieces
- 2 tablespoons red chili sauce
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon ginger-garlic powder
- Salt to taste
- 1 teaspoon chicken masala
- 1/4 cup yogurt
- 2 tablespoons oil
- 2 tablespoons butter
- 2 tablespoons cornflour
- 1/2 teaspoon black pepper
- 1/2 cup water
- Fresh coriander for garnish
Instructions
- Mix chicken pieces with red chili sauce, red chili powder, turmeric powder, coriander powder, ginger-garlic powder, salt, chicken masala, and yogurt. Marinate well.
- Heat oil in a large pan and cook the marinated chicken until tender and cooked through.
- In a separate pan, heat butter and add cornflour. Roast lightly until fragrant.
- Add water, salt, and black pepper to the butter-cornflour mixture. Cook gently until you get a smooth gravy consistency.
- Pour the gravy into the pan with cooked chicken and mix well.
- Cover and simmer for a few minutes to let flavors blend together.
- Garnish with fresh green coriander and serve hot.
Notes
- Allow enough time for marination – at least 30 minutes for best flavor
- Adjust gravy consistency with water if needed – it should be smooth and coating
- Adjust spice level by increasing or decreasing red chili powder and sauce according to taste
- Fresh coriander garnish adds brightness and complements the rich flavors
