Description
This Rice Krispie Ice Cream Sandwich is a fun, no-bake summer dessert combining chewy marshmallow Rice Krispies with your favorite creamy ice cream, creating the perfect viral treat.

- 6 cups Rice Krispies cereal
- 1 package mini marshmallows (10 oz)
- 3 tbsp unsalted butter
- Ice cream of choice (softened slightly for spreading)
Instructions
- In a large saucepan over low heat, melt the butter.
- Add the mini marshmallows and stir until completely melted and smooth.
- Remove from heat and quickly stir in the Rice Krispies until evenly coated.
- Lightly grease a 13 x 9-inch baking dish with cooking spray. Using a buttered spatula (or clean hands), press the mixture firmly and evenly into the pan. Let cool completely.
- Once set, remove the sheet from the pan and cut it in half crosswise.
- Spread a thick, even layer of softened ice cream over one half.
- Top with the other half and press gently to form a sandwich.
- Wrap the whole thing in plastic wrap or foil and freeze for at least 2 hours, or until firm.
- Slice into squares, serve, and enjoy your crunchy, creamy creation!
