Description

Mini Kol Böreği is a beloved Turkish pastry featuring tender, flaky dough rolled into spirals and filled with savory seasoned ground meat. These delightful bite-sized pastries combine crispy exteriors with soft, buttery layers and a flavorful meat filling.


Ingredients

  • 500 grams all-purpose flour (4 cups)
  • 1 gram dry yeast (1 teaspoon)
  • 5 grams powdered sugar (1 teaspoon)
  • 12 grams salt (1 dessert spoon)
  • 300 ml warm water (1.5 cups)
  • 80 ml vegetable oil (8 tablespoons)
  • 90 grams melted butter
  • 400 grams ground meat
  • 1 large onion, diced
  • Salt and black pepper to taste

Instructions

  1. Place flour in a large mixing bowl and create a well in the center. Add yeast, sugar, and lukewarm water to the well.
  2. Sprinkle salt around the edges of flour and knead for 10 minutes until dough becomes smooth and baby-soft.
  3. Cover dough and let rest for 15 minutes.
  4. Divide dough into 14 equal portions (60 grams each) and shape into tight, smooth balls.
  5. Roll each ball into a 25cm long oval, lightly flouring as needed.
  6. Mix vegetable oil and melted butter. Brush each oval with the oil mixture.
  7. Stack the oiled ovals on top of each other, cover, and let rest for 20 minutes.
  8. Meanwhile, sauté ground meat with diced onion until browned. Season with salt and black pepper.
  9. After final rest, stretch each dough piece larger, add meat filling to one end, and roll into a spiral while gently stretching.
  10. Brush each completed börek lightly with oil.
  11. Bake in preheated 190°C (375°F) fan oven until golden brown.
