Ingredients

  • 100g corn starch (1 cup)
  • 20g flour (1 heaping tablespoon)
  • 180g powdered sugar (1 cup)
  • 20g butter (1 tablespoon)
  • 1 packet vanilla (5g)
  • 50g bitter chocolate
  • 50g white chocolate
  • 100ml liquid cream
  • 400ml milk for crepes (2 cups)
  • 25g cocoa powder (1 heaping tablespoon)
  • 200g flour for crepes (1 cup + 4 heaping tablespoons)
  • 3 eggs
  • 50g powdered sugar for crepes (2.5 tablespoons)
  • 25ml oil (2.5 tablespoons)
  • A pinch of salt
  • 1 packet vanilla for crepes (5g)

Instructions

  1. Make base cream by whisking together 800ml milk, corn starch, flour, and 180g powdered sugar in a saucepan
  2. Cook over medium heat, stirring continuously until mixture thickens
  3. Remove from heat and stir in butter and vanilla until smooth
  4. Divide cream equally between two bowls while warm
  5. Add bitter chocolate to one bowl and white chocolate to the other, stir until melted
  6. Cover each bowl with plastic wrap touching the surface and refrigerate overnight
  7. Next day, add 50ml liquid cream to each chilled mixture and whip with mixer until silky smooth
  8. Transfer each cream into separate piping bags
  9. For crepes: blend all crepe ingredients until completely smooth
  10. Cook crepes in 24cm pan over medium heat, cooking only bottom side
  11. Let crepes cool completely and trim edges to create perfect circles
  12. Alternate layers between crepes and chocolate creams
  13. Refrigerate assembled dessert for at least one full night before serving

  • All measurements use a 200ml glass as standard cup measurement
  • You’ll need a 24cm pan for the crepes
  • Make the chocolate creams a day ahead for best results
