Description
A stuffed sandwich bread recipe featuring soft, pillowy homemade bread filled with delicious chicken salad and topped with colorful vegetables, herbs, and cheese. This complete meal wrapped in golden, fluffy bread is customizable and perfect for family dinners or entertaining.

- 500g all-purpose flour (about 4 cups)
- 300ml warm water (1 cup plus a bit extra)
- 30ml vegetable oil (3 tablespoons)
- 20g fresh yeast or 10g dry yeast
- 10g salt (1 teaspoon)
- 1 teaspoon powdered sugar
- 3 tablespoons olive oil
- Red pepper flakes and thyme
- Red onion, cherry tomatoes
- Green and black olives
- 50g grated cheese (cheddar or your favorite)
- 500g cooked chicken breast (shredded)
- 7 tablespoons mayonnaise
- 3 tablespoons yogurt
- 1 clove garlic, minced (optional)
- 1 grated carrot
- 4 tablespoons cooked corn
- 1 teaspoon mustard (optional)
- 4 small pickles, finely chopped
- Salt and black pepper to taste
- Fresh dill or parsley (if desired)
Instructions
- Create a well in flour and add yeast, sugar, and warm water. Let dry yeast sit for 5 minutes until foamy.
- Add oil and salt, then knead until dough is smooth and soft. Cover and let rise until doubled in size.
- While dough rises, mix shredded chicken, mayonnaise, yogurt, garlic, grated carrot, corn, mustard, pickles, salt, pepper, and herbs for the filling.
- Roll risen dough into a 30x30cm square and divide into 9 equal squares.
- Place squares on baking tray and let rise again (10 minutes in 40°C oven).
- Brush with olive oil and add toppings: vegetables, herbs, and cheese.
- Bake in preheated fan oven until golden brown.
- Cool completely, then carefully make pockets in each piece and stuff with chicken filling.
Notes
- One and a half pieces are very filling – this makes a complete meal
- Dough should be soft and slightly sticky – don’t worry if it feels different from regular bread dough
- Can be customized with different fillings and toppings
