Description

A delicious homemade spicy veg pasta with fresh vegetables, aromatic spices, and melted cheese. This colorful and flavorful vegetarian pasta dish combines perfectly cooked penne or macaroni with sautéed onions, tomatoes, capsicum, and carrots in a spicy sauce topped with gooey cheese.


Ingredients

  • 2 cups pasta (penne or macaroni)
  • 1 medium onion, finely chopped
  • 2 medium tomatoes, finely chopped
  • 1 medium capsicum (bell pepper), finely chopped
  • 1 medium carrot, finely chopped
  • 1 inch piece fresh ginger
  • 45 garlic cloves
  • 23 green chilies
  • 1/2 teaspoon black pepper
  • 2 tablespoons red chili sauce
  • 3 tablespoons tomato ketchup
  • Salt to taste
  • 23 cheese slices for topping
  • 2 tablespoons fresh coriander, chopped
  • 3 tablespoons oil or butter

Instructions

  1. Boil the pasta in hot salted water until al dente. Strain and keep aside.
  2. Finely chop onion, tomato, capsicum, and carrot.
  3. Grind ginger, garlic, green chilies, and black pepper into a smooth paste.
  4. Heat oil or butter in a large pan over medium heat.
  5. Add the ground spice paste and sauté for 1-2 minutes until fragrant.
  6. Add all chopped vegetables and cook for 2-3 minutes until slightly tender.
  7. Add red chili sauce, tomato ketchup, and salt. Mix well and cook for 1-2 minutes.
  8. Add the boiled pasta to the vegetable mixture and toss gently to combine.
  9. Cook for 2-3 minutes more, allowing flavors to blend well.
  10. Transfer to serving bowl, top with cheese slices, and garnish with fresh coriander.
  11. Serve hot and enjoy your homemade spicy veg pasta!

  • Don’t overcook the pasta – it should have a slight bite to it
