Description
Homemade fruit snacks are a fun and healthy treat for both kids and adults, made with real fruits and vegetables. They are free from artificial sugars and can be customized according to your family’s taste preferences.
Ingredients
Scale
- 1 cup fruit (chopped)
- ¼ cup vegetables (chopped and peeled if necessary)
- ¼ to ½ cup pure apple juice (no added sugar)
- 2 Tablespoons raw honey
- ¼ teaspoon pure vanilla extract
- 3 Tablespoons gelatin (preferably collagen, grass-fed)
Instructions
- Place silicone molds on a large baking sheet or line an 8×8′ square dish with wax paper and lightly grease. Set aside.
- In a high-powered blender, add your chopped fruit, vegetables, and ¼ cup of apple juice. Secure the lid tightly.
- Blend on high, slowly increasing the speed until the mixture is smooth. If it’s too thick, add more apple juice one tablespoon at a time until you get a nice consistency.
- Add honey and vanilla extract to the blender, then blend again until smooth.
- Taste the mixture and add more honey if you want it sweeter.
- Transfer the mixture to a small saucepan and whisk in the gelatin.
- Heat on medium for about 3 minutes, or until the gelatin is fully dissolved and the mix is smooth. Make sure not to let it boil!
- Using a dropper, fill your silicone molds or pour the mixture into your prepared baking dish. Keep the saucepan on the warm burner (with the heat off) while filling the molds to keep it warm.
- Place everything in the refrigerator to set for at least 2 hours.
- Once set, remove the fruit snacks from the molds. If you used a baking dish, take it out, cut into pieces, and enjoy or store for later.
Notes
- Fruit and vegetable combinations: green grapes with spinach, strawberries with beets, peaches with carrots, blueberries with zucchini
- Store in an airtight container in the refrigerator for about 1 week
- Can be frozen for up to 3 months
- For a vegan version, substitute agar-agar for gelatin in equal amounts
- Keep refrigerated especially during warm weather
- Great for lunchboxes with an ice pack
