- Chopped cabbage (1 cup)
- Chopped carrot (1 medium)
- Red chili sauce (2-3 tablespoons)
- Soy sauce (2-3 tablespoons)
- Salt to taste
- Fresh coriander for garnish (2-3 tablespoons)
- Oil for cooking (2 tablespoons)
Instructions
- Add 5 eggs to the cooked rice, mix in some butter, and lightly fry until the eggs are cooked and well combined with rice.
- Heat some oil in a pan and add chopped ginger and garlic. Sauté until fragrant.
- Add chopped onion, cabbage, carrot, and green chili to the pan. Stir-fry until vegetables soften slightly.
- Once the veggies are tender, add red chili sauce, soy sauce, and salt to taste.
- Add the egg fried rice mixture to the pan with seasoned vegetables and mix everything well.
- Cook for 2-3 minutes, stirring frequently, to let all the flavors combine nicely.
- Garnish with fresh coriander and serve hot immediately.
Notes
- Leftover rice works perfectly for this recipe and gives better texture
- Adjust green chili and red chili sauce according to your spice preference
- You can add other vegetables like bell peppers, peas, or corn for variety
