  • 5 eggs
  • Some butter (2-3 tablespoons)
  • Chopped ginger (1 teaspoon)

  • Chopped green chili (1-2 pieces, to taste)
  • Chopped onion (1 medium)
  • Chopped cabbage (1 cup)
  • Chopped carrot (1 medium)
  • Red chili sauce (2-3 tablespoons)
  • Soy sauce (2-3 tablespoons)
  • Salt to taste
  • Fresh coriander for garnish (2-3 tablespoons)
  • Oil for cooking (2 tablespoons)

Instructions

  1. Add 5 eggs to the cooked rice, mix in some butter, and lightly fry until the eggs are cooked and well combined with rice.
  2. Heat some oil in a pan and add chopped ginger and garlic. Sauté until fragrant.
  3. Add chopped onion, cabbage, carrot, and green chili to the pan. Stir-fry until vegetables soften slightly.
  4. Once the veggies are tender, add red chili sauce, soy sauce, and salt to taste.
  5. Add the egg fried rice mixture to the pan with seasoned vegetables and mix everything well.
  6. Cook for 2-3 minutes, stirring frequently, to let all the flavors combine nicely.
  7. Garnish with fresh coriander and serve hot immediately.

Notes

  • Leftover rice works perfectly for this recipe and gives better texture
