  • 1 cup buttermilk
  • 2 large eggs

  • 1 3/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a cake pan.
  2. In a bowl, whisk together the sugars, oil, buttermilk, eggs, and vanilla until smooth.
  3. In another bowl, sift together the flour, cocoa powder, baking soda, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the grated zucchini and chocolate chips if using.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Allow to cool before serving.

Notes

  • Make sure to squeeze out excess moisture from the grated zucchini for a better texture.
  • Be careful not to overmix the batter; mix until just combined for a fluffier cake.
  • Add nuts for some extra crunch if you like!
