Description

A flavorful Indian-style chicken dish featuring crispy marinated chicken breast strips tossed in aromatic spices and butter tadka, finished with a creamy tandoori mayo and curd sauce.

Ingredients

  • Chicken breast, cut into long strips – 500g
  • Black pepper – 1 tsp
  • Ginger-garlic paste – 2 tbsp
  • Salt – to taste
  • Egg – 1 large
  • Corn flour – 3 tbsp
  • Oil for deep frying – as needed
  • Chopped garlic – 4-5 cloves
  • Green chili – 2-3 pieces
  • Curry leaves (meethi neem) – 8-10 leaves
  • Whole dry red chili – 2-3 pieces
  • Red chili powder – 1 tsp
  • Turmeric powder – 1/2 tsp
  • Butter – 3 tbsp
  • Curd – 1/2 cup
  • Tandoori mayonnaise – 3 tbsp
  • Salt for sauce – a pinch

Instructions

  1. Mix chicken strips with black pepper, ginger-garlic paste, salt, egg, and corn flour. Marinate for 15 minutes.
  2. Heat oil and deep fry the marinated chicken strips until golden brown and crispy.
  3. In a separate pan, heat butter over medium heat.
  4. Add chopped garlic, green chili, curry leaves, whole dry red chili, red chili powder, and turmeric powder to the butter.
  5. Sauté the spices until aromatic and fragrant.
  6. Add the fried chicken to the tadka and mix well to coat evenly.
  7. Cook for 10 minutes, stirring occasionally.
  8. In a bowl, mix curd, tandoori mayonnaise, and a pinch of salt to make the sauce.
  9. Drizzle the creamy sauce over the hot chicken tadka.
  10. Serve immediately while hot and crispy.

Notes

  • Don’t skip the marination time – even 15 minutes makes a significant difference in flavor
  • Ensure oil is properly heated before frying for the perfect crispy texture
  • Curry leaves are essential for authentic flavor – dried herbs cannot replicate this taste
  • Serve immediately for the best texture and temperature contrast
  • Adjust spice levels according to your preference
  • Can be served with rice, naan, or enjoyed as a standalone appetizer
