Breakfast Burritos are a tasty and filling way to kick off your day. Packed with flavors of eggs, meat, cheese, and crispy hash browns wrapped in a warm tortilla, they can be customized to your preference and made in no time. Perfect for busy mornings or lazy weekends.

Ingredients

Scale
  • 4 large flour tortillas
  • 4 large eggs, beaten
  • 1 cup cooked meat (sausage, bacon, or chorizo)
  • 1 cup prepared hash browns
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup homemade salsa or creamy sauce
  • Salt and pepper to taste
  • 1 tablespoon oil or butter for cooking

Instructions

  1. In a skillet, cook your choice of meat until browned and cooked through. Remove and set aside.
  2. In the same skillet, add hash browns and cook until crispy.
  3. Whisk the eggs and cook them in the skillet until fluffy.
  4. Warm the tortillas in a separate pan or microwave for 10-15 seconds.
  5. To assemble, add a layer of cooked meat, crispy hash browns, fluffy eggs, and cheese to each tortilla.
  6. Drizzle with homemade sauce and season with salt and pepper.
  7. Wrap the tortillas tightly by folding in the sides and rolling from the bottom up.
  8. Serve warm immediately or wrap in foil to keep warm.

Notes

  • Feel free to add veggies like bell peppers or onions for extra flavor.
  • Use different types of cheese to give a unique taste each time.
  • If you love a bit of spice, add hot sauce or fresh chili.
  • For meal prep, make a batch and freeze individually wrapped burritos for up to a month.
  • Reheat frozen burritos in a microwave for 1-2 minutes or in a skillet over low heat.
