Description
Brazilian Coconut Caramel Balls are sweet, crunchy candies made from sweetened condensed milk, desiccated coconut, and caramelized sugar. These bite-sized treats are a traditional Brazilian delight with a soft, chewy center and a crisp caramel coating.
Ingredients
Scale
- 1 can (14 oz) sweetened condensed milk
- 1 cup (100g) desiccated coconut
- 1 tbsp butter
- 1 cup sugar
- ½ cup water
- ½ tsp white vinegar
Instructions
- In a small saucepan over medium heat, combine the condensed milk, desiccated coconut, and butter. Stir continuously until the mixture thickens and comes together into a soft, sticky dough.
- Transfer the mixture to a covered bowl and refrigerate for 2 hours, or until completely cooled.
- Once chilled, scoop and roll the coconut mixture into small balls. Place them on a parchment-lined tray and return to the fridge to keep firm.
- In a small pot, combine the sugar, water, and vinegar. Stir gently to mix, then heat over medium-high without stirring until it reaches 300°F (hard crack stage). Remove from heat.
- Working quickly, dip each coconut ball into the sugar syrup, ensuring an even coating. Let excess drip off before placing the coated balls back onto the parchment-lined tray.
- Allow the coated candies to cool completely until the sugar hardens. Serve and enjoy!
Notes
- Use a candy thermometer to ensure accurate temperature when making the sugar syrup.
- Work quickly when dipping the balls—sugar syrup hardens fast once removed from heat.
- Store in an airtight container at room temperature for up to 5 days.
- Add a pinch of salt to the coconut mixture for a sweet-salty contrast.
