Description

Brazilian Coconut Caramel Balls are sweet, crunchy candies made from sweetened condensed milk, desiccated coconut, and caramelized sugar. These bite-sized treats are a traditional Brazilian delight with a soft, chewy center and a crisp caramel coating.

Ingredients

Scale
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup (100g) desiccated coconut
  • 1 tbsp butter
  • 1 cup sugar
  • ½ cup water
  • ½ tsp white vinegar

Instructions

  1. In a small saucepan over medium heat, combine the condensed milk, desiccated coconut, and butter. Stir continuously until the mixture thickens and comes together into a soft, sticky dough.
  2. Transfer the mixture to a covered bowl and refrigerate for 2 hours, or until completely cooled.
  3. Once chilled, scoop and roll the coconut mixture into small balls. Place them on a parchment-lined tray and return to the fridge to keep firm.
  4. In a small pot, combine the sugar, water, and vinegar. Stir gently to mix, then heat over medium-high without stirring until it reaches 300°F (hard crack stage). Remove from heat.
  5. Working quickly, dip each coconut ball into the sugar syrup, ensuring an even coating. Let excess drip off before placing the coated balls back onto the parchment-lined tray.
  6. Allow the coated candies to cool completely until the sugar hardens. Serve and enjoy!

Notes

  • Use a candy thermometer to ensure accurate temperature when making the sugar syrup.
  • Work quickly when dipping the balls—sugar syrup hardens fast once removed from heat.
  • Store in an airtight container at room temperature for up to 5 days.
  • Add a pinch of salt to the coconut mixture for a sweet-salty contrast.
