Description

A delicious and easy breakfast casserole filled with eggs, ham, cheese, and hash browns. Perfect for feeding a crowd or family breakfast and can be made ahead of time for busy mornings.

Ingredients

Scale
  • 6 large eggs
  • 2 cups milk
  • 4 cups shredded hash brown potatoes
  • 2 cups diced ham
  • 2 cups shredded cheese (like cheddar and mozzarella)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, whisk together the eggs and milk until well mixed.
  3. Stir in the shredded potatoes, ham, cheese, salt, pepper, paprika, and garlic powder until everything is combined.
  4. Pour this mixture into the prepared baking dish and spread it out evenly.
  5. Bake in the preheated oven for 45-50 minutes, or until the eggs are set and the top is golden brown.
  6. Allow to cool for a few minutes before slicing and serving.

Notes

  • Make sure to grease your baking dish well to avoid sticking.
  • Feel free to add other veggies like bell peppers or onions for extra flavor.
  • For a spicier kick, add some diced jalapeños or hot sauce.
  • Can be prepared the night before and baked in the morning.
  • Store leftovers in the refrigerator for up to 3 days or freeze for longer storage.
  • For a vegetarian version, skip the ham and add more vegetables like spinach or mushrooms.
