  • 200g cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 23 garlic cloves, minced
  • 2 tablespoons olive oil
  • Salt, pepper, and Provençal herbs to taste
  • 3 tablespoons tomato paste (or 100ml tomato sauce)
  • 200ml water
  • 100g cheese (mozzarella or favorite melting cheese)

Instructions

  1. Preheat oven to 180°C (350°F)
  2. Place raw spaghetti directly into baking dish
  3. Drizzle olive oil over spaghetti and add halved cherry tomatoes, sliced red onion, and minced garlic
  4. Season with salt, pepper, and Provençal herbs, then gently toss to coat
  5. Whisk tomato paste and water until smooth, then pour evenly over pasta
  6. Sprinkle cheese over the top
  7. Cover with foil and bake for 30-35 minutes
  8. Remove foil and bake for another 10 minutes until cheese is golden and bubbling
  9. Let rest for 5 minutes before serving
