- 250g spaghetti
- 200g cherry tomatoes, halved
- 1 small red onion, thinly sliced
- 2–3 garlic cloves, minced
- 2 tablespoons olive oil
- Salt, pepper, and Provençal herbs to taste
- 3 tablespoons tomato paste (or 100ml tomato sauce)
- 200ml water
- 100g cheese (mozzarella or favorite melting cheese)
Instructions
- Preheat oven to 180°C (350°F)
- Place raw spaghetti directly into baking dish
- Drizzle olive oil over spaghetti and add halved cherry tomatoes, sliced red onion, and minced garlic
- Season with salt, pepper, and Provençal herbs, then gently toss to coat
- Whisk tomato paste and water until smooth, then pour evenly over pasta
- Sprinkle cheese over the top
- Cover with foil and bake for 30-35 minutes
- Remove foil and bake for another 10 minutes until cheese is golden and bubbling
- Let rest for 5 minutes before serving
